Do you ever just wake up and want pancakes? If so, I have the perfect recipe for you – Cocoa Banana Pancakes! This pancake recipe is one of my absolute favourites. I mean who doesn’t love a solid chocolate banana combo?
My love for cocoa banana pancakes began when I went to Nicaragua with my partner and some friends in November 2022. We stayed in San Juan Del Sur (SJDS) for the majority of the trip and went to the same breakfast spot 4 times! Now, as many of you know, finding gluten and dairy free options at restaurants can be challenging to say the least. At this cafe in SDJS called, Ding Repair Cafe, they had so many dairy and gluten free options, it was incredible. If you are headed to SJDS in the near future, you must eat here.

Anyways, at this cafe they offered gluten and dairy-free cocoa pancakes infused with plantains. These pancakes were incredible, and when I returned from my trip I needed to whip up a dupe to this recipe.
Initially, I followed Natalie’s recipe from Feasting on Fruit, but I made a few modifications to make it sweeter. You can find the original recipe here: https://feastingonfruit.com/fluffy-chocolate-banana-pancakes/
This recipe is as simple as throwing all the ingredients into a blender, and blending until smooth. After the wet and dry ingredients have been blended together, then it is time to add chocolate chips (or anything else you desire in your pancakes)!

Using a ¼ cup of pancake batter per pancake, cook the pancakes on medium heat for 2-3 minutes per side, or until the pancake is cooked through.
Serve warm with all your fav toppings! A few of mine are peanut butter, maple syrup, bananas, fried plantains, almonds, roasted pecans, coconut shavings, and fruit! Heck you could even put bacon on them and it would be amazing.

Cocoa Banana Pancakes
2 Servings |Prep time: 2 min| Cook time: 15 min | Total time: 17 min
Ingredients
- 1 banana
- 1 cup of dairy free milk
- 2 tbsp maple syrup
- 1 tsp of vanilla extract
- 1 tbsp apple cider vinegar
- 1 tsp baking soda
- ¼ cup cocoa powder
- ¼ cup of sugar
- 1 ½ cup gluten free flour
- ¼ vegan chocolate chips

Directions
- Blend the banana, milk, maple syrup, apple cider vinegar, and vanilla together in a blender until smooth.
- Now blend the dry ingredients, minus the chocolate chips, until smooth. Be careful not to over blend.
- Add the chocolate chips to the batter and stir with a spoon or spatula.
- Heat a frying pan on the stove over medium heat using your oil of choice.
- Using a ¼ cup of batter per pancake, cook them in the frying pan for 2-3 minutes per side. If you desire a sweeter pancake feel free to sprinkle sugar over the pancakes while cooking.
- Serve warm with your choice of toppings! Enjoy!!
Notes
- If you are looking for a less sweet pancake, you can omit the sugar.
- This recipe can also be used with regular milk and flour. Use the same ratios.
- Toppings I recommend include: peanut butter, nut butter, maple syrup, bananas, plantains, almonds, coconut shavings, berries.
